Ingredients 

2 tbsp olive oil

2 cloves of garlic

1 medium onion

1/2 tsp turmeric

1 tsp garam masala

1/4 tsp chili powder

1 tsp ground cumin

1/4 tsp salt

1/2 tsp black pepper

2 tsp lemon or lime juice

796ml can of diced tomatoes

2 1/2 cups of vegetable broth

400ml can of coconut milk

2 cups of red lentils

vegetables of your choice 

rice

In a large sauce pan.

​

1. Cook onions and garlic in oil until soft.

​

2. Add all spices and lemon or lime juice to softened onions and garlic.

​

3. Add vegetable broth, canned tomatoes, coconut milk and lentils. 

​

4. Chop and stir in vegetables of your choice. (Our favourite - red peppers and broccoli) 

​

5. Bring to boil on medium heat. Once boiled lower heat and let simmer for 20-25 minutes until it thickens.

​

6. While it simmers cook your choice of rice to serve it on. (our favourite - Basmati rice)

*feel free to use chicken broth and add chicken if you would like, but we love it so much as is, that we don't feel its necessary!
